The next time you are baking scones or a cake and discover
you forgot to buy the whipping cream the recipe calls for, substitute
mashed potatoes.
"Mashed potatoes are an ideal foundation for flavors such as

The recipe developer and home economist has been able
to experiment by making up recipes that are healthier, contain
less fat and are
more nutritious in general.
And she points out that a secondary benefit
of using potatoes and other vegetable or fruit purees as replacement
ingredients are that
they
provide increased moisture to baked goods. This helps extend their
shelf lives.
A survey suggests that cooks in Atlantic Canada have
realized the benefits of potato nutrition. The economist is quoted for saying that when she
tried the mashed potato in pastry instead of sour cream or whipped
cream “it
really worked well.”
