Potato Nachos

1 large PEI Potato, unpeeled and sliced in wedges
1/4 tsp salt
1/4 cup salsa
1/4 cup sour cream
3/4 cup (3 ounces) 4% less-fat shredded Cheddar cheese  
1/2 cup chopped green onions  
  (bacon bits optional)

Arrange potato Wedges in a microwave-safe pie plate or shallow baking dish. Sprinkle slices with salt

Cover with microwaveable plastic wrap; microwave at HIGH 4 to 5 minutes, or until potatoes are tender, rotating pie plate a half-turn after 2 minutes.

Sprinkle with cheese and green onions. cover and microwave at HIGH 30 seconds or 1 minute, or until cheese melts.

Dip in Salsa & Sour cream
