Method: Cut PEI potato slices (looks the shape of french fries but a lot thinner). Put vegetable oil into a stir pan/wok. Cut green onion into small pieces and stir with vegetable oil for 30 seconds. Pour all potatos in, stir together for 15-20 minutes, add vinegar, salt & pepper and sugar. Stir another 5 minutes. Serve in a large plate.
