The perfect place to store a potato is somewhere that is dark and cool.

- Light – causes a green cast on the potato, which gives a bitter flavor.
- Warmth – causes the potato to shrivel, sprout, and lose nutrients as well as moisture.
- Cold – causes black lines or spots. It also causes the starch to convert to sugar, which gives an unpleasant sweet flavor, and also changes the cooking qualities of the potato.
