A Practical Guide - Choose the Right Potato

Choosing the right potato can make a world of difference in the finished product.

BUYING POTATOES

GRADES

Potatoes are graded and sold according to federal standards for size, shape, maturity, freedom from dirt, injuries, blemished and disease.

The grades are as follows:
Canada No 1
Canada No. 1 Large
Canada No.1 Small
Canada No. 1 New Potatoes
Canada No. 2.
(Canada No 1 being the highest standard)

Keep your purpose in mind when buying them.

If you are cutting or peeling the potato the Canada No. 2 grade is just as delicious but less expensive. (It is less visually appealing.)
